Who said vegan wheat-free naturally sweetened cake can't be delicious? Max and I made some dreamy mini cakes and cupcakes from a Pamela's mix for the mister's birthday. I added extra cocoa powder and a tiny bit of powdered sugar and almond milk to the frosting mix to kick it up a notch. They were so rich and chocolatey we (the grown ups at least) agreed that once a year is plenty. I'm old enough to remember when vegan cake from a box was not so delicious (actually I can remember when it didn't even come in a box). But this cake was perfectly moist and super rich. I don't think even a chocolate cake expert could tell the difference!
P.S. I used to be one of those people that cleans as they cook, so that when I sat down to enjoy the meal my kitchen was already spic and span. Clearly I am no longer one of those people. Maybe it's the baby on my arm...or perhaps it's the fact that the mister is in charge of dishes?
